Be careful making changes-it is so unique all by itself.
My suggestions:
Measure your sink and put in a metal bowl for clean up.
Store dry goods in the other side.
Cooking could be an interesting adventure, I don’t know if a thick cutting board under the stove would be enough to prevent the trailer sides from getting too hot.
Your solar might be enough for all your cooking needs-hot plate, collapsible kettle.
I’m curious how it pulls on a windy day. I see some great future adventures for you and your wife (and dog). I look forward to the tales you tell.
